Eggplant Wrap

Quick and filling meal to prepare after a long day!

Ingredients:
1/2 cup cubed and peeled eggplant
1 ounce firm tofu, cubed
1/2 cup diced tomato
1/4 tsp basil 
1/ tsp thyme
Tortilla

Directions:
Sautée veggies and spices until the eggplant is tender.  Spoon into a tortilla, roll it up, and serve!
