Ingredients:
1/2 cup sliced eggplant
1/2 cup sliced mushroom
1/2 cup sliced zucchini
1/2 cup sliced tomato
1 ounce firm tofu
Black pepper
Salt
Cheese
Pita, hoagie roll, thin pancake, tortilla
Directions:
Sautée the vegetables, tofu, and spices until the veggies are tender. Spoon onto the bread vehicle of choice. Top with the cheese. Eat!
