Summer squash, also known as yellow squash, brings a nice flavor to this egg dish.
Ingredients:
1 egg
1/2 cup chopped yellow squash
1/2 cup chopped zucchini
1/4 cup quinoa
Salt
Pepper
Directions:
Mix ingredients. Pour into ramekins, small baking dish, or I use 2 small glass bowls. Bake at 400 degrees for 20-30 minutes.
