Quinoa and Summer Squash

A great dish for summer.  Easy to make with just a few ingredients and not over-filling for a hot evening!

Ingredients:
1/2 cup chopped summer squash
1/2 cup diced tomato
1oz firm tofu
2 sprigs parsley
2 leaves basil 
1/2 tsp oil 
1 tsp red wine vinegar
Salt
Pepper
1/4 cup cooked quinoa

Directions:
Sautée squash, tomatoes, tofu, spices, oil, and vinegar until squad is tender. 
Add quinoa and stir until incorporated and warm.  

Serve over mixed greens.
