Southern Quinoa

This combination is spectacular!

Ingredients:
1/4 cup cooked quinoa
1/4 cup pinto beans
1/2 cup diced tomato
1/2 cup corn 
1 Tbsp Rotel
1oz firm tofu

Directions:
Make a thick sauce with the Rotel and tofu.  Mix the rest of the ingredients and combine with the sauce.  Heat and serve.
