Scalloped Corn

Simple to prepare, fun to eat!

Ingredients:
1/2 cup sliced tomato
1/2 cup corn
1 oz firm tofu
1/4 cup cooked quinoa

Directions:
Layer tomato and corn in a small baking dish. Last layer should be sliced tofu. Sprinkle quinoa on top. Bake in a 350 degree oven for 20 minutes.
