DELICIOUS!
Ingredients:
1 cup squash (butternut or delicata) cubed
1/4 cup yam diced
1/4 cup tomato diced
1/2 cup cooked black beans
1/2 cup cooked corn
1/4 cup veggie broth
1/4 tsp oregano
1/4tsp cumin
salt
Directions:
Put the squash, yam, tomato, spices, and broth in a sauce pan and cook until tender. Add the black beans and corn and heat through. Serve with tortilla chips or polenta.
