One word...delicious. Preparation was simple and the result is scrumptious!
Ingredients:
1 cup eggplant, approx. 4 slices
2Tbsp nutritional yeast
1oz. Firm tofu
1/2 cup tomato diced
1/2 tsp basil
1 tsp parsley
Salt
Pepper
Cheese to top
Directions:
Broil eggplant slices 5 minutes each side.
